Recipe :: Thai Orange Pork Lo Mein

We are luuuurving the slow cooker around here lately (Remember the All Day Chinese Chicken recipe? Check it out here).  Mike picked this recipe to try and is finally coming over to the dark side on the whole slow cooker thing. Until you try it, it’s tough to fully grasp the awesomeness of throwing raw ingredients into a pot and walking away for 8 hours (and I thought I was easily amused as a kid…) and coming back to a fully prepared delicious meal.

What you need:

– 1 lb boneless center-cut pork loin roast
– 1 large onion halved lengthwise, cut into wedges
– 1 red bell pepper, cut into strips
– 3 tsp chopped garlic
– 2 tsp finely chopped gingerroot
-1/2 cup orange juice
– 1/2 cup orange marmalade
– 1 1/2 tsp sriracha
– 2 tbsp fresh lime juice
– 1 1/2 – 2 tbs cornstarch
– 1 or 2 tbs soy sauce
– 1 cup snow pea pods

1. Spray 4- of 5-quart slow cooker with cooking spray. In cooker, mix pork, onion, bell pepper, garlic, gingerroot, orange juice, marmalade, and sriracha.

2. Cover; cook on low heat setting 6 to 8 hours or high heat setting 3 to 4 hours.

3. In small bowl mix lime huice, cornstarch and soy sauce. Stir mixture and pea pods into pork mixture in cooker. If needed, increase heat setting to high; cover and cook about 15 minutes longer until pea pods are crisp. Serve with noodles.
